Breton Brittle Chocolates

Completely unspectacular: These chocolates virtually conceal themselves; they have neither a special form nor an advertising box. Initially, one is inclined to overlook them, but that would be a mistake. They are indeed the most delicious cloister chocolates, in our opinion at least, we have ever found on our journeys in France. Each one weighs 22.5 g and has, beneath its outer layer composed of 55% chocolate, a soft gianduia filling. The filling, in turn, has a crispy layer, whose production is a secret. Its effect, in combination with the other ingredients, is surprising. Once you have tried these chocolates, it is challenging to abstain from them.
At the entrance of the Forest of Brocéliande (Brécilien in Breton), you can start a journey to fantastic places. The tale of King Arthur and the Knights of the Round Table played out in the forest, and with a little bit of luck, you can visit the mysterious burial place of his tutor, Merlin, the magician. On the outskirts of this enchanting landscape, you find the Trappist monastery of Campénéac (Kempenieg in Breton), where the stuff of legends is made: in the form of Breton cakes and pastries and sweet treats.
A place that once inspired romance and bravery is now the cloister bakery. Nuns in ordinary, everyday clothes are working hard in the unromantic atmosphere of an austere workspace. The workplace is modern and complies with regulations, technical equipment and manual work are both playing their part in the production process. These are typical aspects of cloister work today.

Dark chocolate, cocoa: 58% minimum: 42% cocoa mass, 41%, sugar, 16% cocoa butter, soy lecithin, vanilla extract.
Gianduja: 46.5% sugar, 31.5% hazelnut; 12.5% cocoa mass; 10.0% cocoa butter; vanilla extract;soy lecithin.
Waffel crumbs:wheat flour, sugar, butter, milk, salt, barley malt flour, raising agent (sodium bicarbonate).
