Chef's Knife (25.5 cm Blade length)
The ultimate kitchen knife. Use the Couteau de chef for among other tasks – cutting meat – scaling fish – grating vegetables – chopping onions – crushing peppercorns and much more. This has to be a large knife, because it carries out various tasks by virtue of its weight. It takes some practice to handle this universal tool: always hold the handle with all your fingers, with the thumb pressing against the blade. When chopping herbs the rounded-off tip of the knife is pressed with one hand on the work surface, while the other rocks the knife up and down.

Among the most versatile knives are the large chef’s knife (couteau de chef) and the smaller paring knife (couteau d’office). They have rigid blades, wide at the junction, and are used for chopping, cutting and slicing. The paring knife is also used for peeling.

At the end of the handle, you find a second bolster. The extra weight shifts the center of gravity of the knife backwards, giving it a superior balance. These forged kitchen knives come from the Solingen factory of Franz Güde, who founded his blacksmith workshop in 1918. All Güde knives are made of stainless steel, ice-hardened (56 HRC), hand-pulled and hand-sharpened.
We offer the Güde knives in two variants: with grip plates made of plum wood and - as for professional knives mandatory for years - with grip plates made of the thermoplastic polyoxymethylene (POM). All handles are fastened with stainless steel rivets.
Clean the knives immediately after use with a damp cloth and dry directly.
