Venezuelan Black 100% cocoa
This "roll" of pure cocoa feels good and secure in the hand when portioned with a grater. The cacao comes from a Venezuelan plantation whose history dates back to 1640. It is organically grown, though not certified, is made from Criollo and Trinitario beans. Its more robust cacao notes, which can withstand higher temperatures, enhance braised meat dishes such as coq au vin, while its more subtle fruity hints enhance sauces such as spaghetti bolognese. This cocoa is conched for three days, and unlike cocoa powder, the valuable cocoa butter remains fully contained. (Used instead of cocoa powder, fat should be reduced elsewhere in the respective recipe.)
Willie’s Cacao. Off the Roll
Willie Harcourt-Cooze is one of those slightly crazy or visionary stubborn people, depending on your point of view, who have made it their business to get the best out of a particular product, in his case the cocoa bean, with perseverance and enthusiasm. Cultivation on the plantations takes place without pesticides, fertilizers or other chemical aids, and irrigation is carried out with water from the surrounding area. After harvesting, the cocoa fruit is dried and fermented on site before being shipped to Devon. There, Harcourt-Cooze carefully roasts the beans on an old plant dating back to the 1920s - proving that it's not modern technology that matters, but craftsmanship. The cocoa is conched for three days; unlike cocoa powder, this process retains all of the valuable cocoa butter. Harcourt-Cooze has found an unusual but extremely practical form for the finished product - the roll. This allows the cocoa to lie comfortably in the hand and be finely portioned using a grater. Like pepper and salt used as a spice, it also gives flavor and depth to savory dishes.
