Here come anchovies in a classic Basque version, as "Anchoas a la Donostiarra" (Donostia is the name of the Basque city known in Spain as San Sebastián). In this traditional and distinctive recipe, European anchovies (Engraulis encrasicolus) from the Bay of Biscay are fried in olive oil and seasoned with a little cayenne pepper and garlic - in the form of a clove of garlic and a chili pepper in each can. A little wine vinegar and salt round off the seasoning. In this preparation, the anchovies taste particularly good as a starter or snack with bread, crispy ciabatta, on crostini and bruschetta and as tapas. You can also use the spicy olive oil to enhance the taste of a pasta dish.
