What you get here in the tin are fillets of European anchovies(Engraulis encrasicolus) caught in the Bay of Biscay. The fish, which are approximately 15 centimetres long, are filleted individually by hand at Olasagasti, salted and marinated in olive oil. The fillets are perfectly firm to the bite, tender but not too soft, with a maritime taste and just the right amount of salt. They taste particularly good as a starter or snack with bread, crispy ciabatta, on crostini and bruschetta. They add a special spice to pasta dishes and go well with salads, especially tomato and bean salads. They are also extremely tasty on pizzas.
