Ramequin au fromage is a classic oven dish in French-speaking Switzerland and in some regions of France, which is often served as a small main course with a salad or as a hearty side dish. The choice of cheeses is just as traditional - from Gruyère, Emmental and Appenzeller to Vacherin Fribourgois AOP and Comté - as is the shape of the dish in which this delicacy is usually prepared on a salty shortcrust pastry base (pâte brisée). It is also called a ramequin and is made of glazed ceramic, earthenware or, as here, refractory glass. The round ramekin is also characterized by its fluted outer wall.

Our Ramequin ramekin made of tempered glass comes from Duralex, the glass manufacturer from near Orléans, which you already know from the bistro glasses in the famous Picardie series. Tempered glass is impact-resistant, hygienic, durable and characterized by a high thermal shock tolerance - in other words, it can even withstand spontaneous changes from very warm to colder environments. Duralex itself states a temperature resistance of -20 to +300 °C. This makes it easy to cool individual portions of desserts such as Mousse au Chocolat, flan or Crème brûlée in it and allow them to set - unless you have a Soufflé, a chocolate cake with a liquid center or Cake moelleux in mind... The uses for our Ramequin mold are numerous and are by no means limited to the preparation of mini gratin, casseroles or egg dishes such as Œufs cocotte. It can also be used at the table as a serving dish - and in the kitchen to keep prepared ingredients ready.
