Traditional farmhouse cheddar from the Isle of Mull is responsible for the tangy flavor of these cookies, which are both rich and purist. It comes from a farm near Tobermory that is widely renowned for its Gold World Cheese Award-winning Isle of Mull Cheese. This mature cheddar is made from the raw milk of cattle fed on lush grass and barley from the Tobermory distillery - providing a distinctive tangy flavor. The cookies have a melt-in-the-mouth texture and a delightful cheese flavor - which also harmonizes with many a single malt.

The Inner Hebrides is an archipelago off the west coast of mainland Scotland. On one of the 79 islands, the Isle of Mull, you find an amazing bakery. The “Island Bakery” uses the best ingredients to make tasty biscuits that are second to none. Dawn and Joe Reade, the family business owners, started baking bread in the mid-1990s. In 2001 they found an ideal way to diversify: with incomparably good cookies, which they (fortunately) market abroad. A characteristic island mentality often comprises a heightened awareness of the finite nature of resources, so it’s hardly surprising that the “Island Bakery” runs on electricity from wind energy and hydroelectric power from the Tobermory River, and the Reades heat the oven with local wood.
