These remarkable patatas fritas - or potato potato chips - come from the Spanish manufacturer La Santamaria. Less is more, as they are made from just four ingredients: the best potatoes, fried in a mixture of sunflower oil and olive oil and then seasoned with salt. They are therefore not over-seasoned and the natural taste of the potatoes comes into its own, as does the fresh note of the olive oil.
