It’s basically more a rasp or a grater than a mill. By turning the crank handle, sharp knives peel of little flakes of nutmeg which are held by four strong mandrels and pressed downwards by a powerful spring mechanism against the opening.
For longer simmering.
Nutmeg in this coarse form is often added to dishes which are simmered for a long time, like stews from India and the oriental cuisine. The nutmeg is then able to fully develop its strength and longer retain its aroma.
