Delicious and versatile: beluga lentils
The small black beluga lentils are so named because they look similar to the caviar of the same name. What they also have in common is that both are prized for their special taste. Beluga lentils have a delicate aroma reminiscent of chestnuts. They do not need to be soaked before preparation and remain pleasantly firm to the bite when cooked. Beluga lentils are therefore well suited to rice dishes, as a side dish and for salads. They are also often served as a colorful contrast to white fish or used as a special extra in pasta dishes. Last but not least, beluga lentils can also be made into a hearty puree (as a base for falafel, for example) or into vegetarian spreads.
