Colavolpe from the Calabrian province of Cosenza began its business in 1910 with the processing of figs, but it also knows how to produce candied fruit in chocolate. His orange and lemon peel "fillets" coated in 72% intense dark chocolate are remarkably tasty. The finger-length pieces, which - at Colavolpe, of course - come from fruit grown on Italian farms, have a pleasantly soft bite and their fruity essential oils harmonize perfectly with the dark cocoa aromas of the chocolate that covers them.
