    General Information

    Specialty baking dish from France

Pâté dough is a special form of shortcrust pastry. The classic French cuisine knows pâtés mainly with rich fillings of meat, sausage meat and spices, which are baked in a coating of hearty-buttery dough. Of course, you can also use seasonal vegetables for the filling of your pâté - the main thing is to have a suitable pâté baking dish at hand. Our loaf pan for pies from de Buyer in Lorraine is made for professional use. It is made of stainless steel and perforated, which ensures the perfect baking result thanks to balanced heat distribution: for tender melt-in-the-mouth, yet crispy baked dough. And to make sure you don't have a mishap when unmolding the pie after baking, the baking pan even comes with permanently mounted hinges that, once released, allow you to fold down the sides. This way, your baked good will definitely not break apart before serving. Of course, you can also use your pie dish to bake a simple sponge cake, a loaf of white bread or a brioche once in a while. Our tip: Cut into slices and arranged attractively, a pie baked in the small mold in particular can be transformed into a fine amuse-bouche that is also delicious with an aperitif.

    Original from France. Shortbread specialists

The gourmet country of France is famous for its shortbread pastries. Whether savory or sweet - salée or sucré - whether Quiche Lorraine, Tarte Fromage, Tarte au Citron, Tarte au Chocolat filled with ganache or Tartelettes with Crème pâtissière and summery berry fruits: The variety of recipes is almost endless. But the basis is always the same: a crispy dough with lots of good butter, called pâte brisée in the language of gourmets. This succeeds in the home oven all the better if professional equipment is available. Hence our recommendation for the baking pans from de Buyer in Le Val-d'Ajol on the edge of the Vosges Mountains. The robust, two-part stainless steel molds have a special feature that ensures a particularly even and good baking result: Their bottoms and edges are perforated all around. This ensures even heat distribution. This means that a beautiful, well-baked crust is formed on all sides, even on the inside. To reduce waste in your kitchen, de Buyer also provides each of its baking pans with cut-to-size baking foils that can be reused up to 200 times.

    Culinary tradition: de Buyer

The company de Buyer designs and manufactures since 1830 cooking and baking utensils not only for professional cooks. In the Vosges at home, one attaches great importance as producing enterprise today to environmental and social standards. In 2022, for example, the company was certified for the second time under the United Nations' "Corporate Social Responsibility Commitment" for sustainable development, which defines more than 50 assessment criteria, including ethical behavior, respect for human rights, and accountability. Increasingly, the company is also committed to activities beyond the boundaries of its own site. To protect the environment and water in the region, de Buyer operates its own wastewater treatment plant. Components of non-stick coatings can be recycled on site and thus reused. The cooking appliance manufacturer recently supported a local reforestation project by planting more than 1,000 trees, and the company's own beehives are used to help revive bee populations in the Vosges Mountains. And just as it is for Manufactum, it is also a matter of course for de Buyer to inspire conscious consumption with durable, quality products.
