These delicious sablés have a wonderfully crumbly texture and a buttery flavor. They are essentially the purest form of the traditional recipe from 1670, which has been passed down from generation to generation with only minor modifications.
Biscuiterie La Sablésienne: Premium-Quality Petits Sablés
Biscuiterie La Sablésienne in Sablé-sur-Sarthe upholds a baking tradition whose historical roots date back to 1670. More importantly, however, the bakery still operates according to uncompromisingly simple, artisanal principles and uses recipes that have been modified only moderately to this day. Only the finest ingredients—such as fresh French butter, flour from the Sarthe department, and eggs from free-range chickens—are used to make the world-famous Petits Sablés. No chemical additives, artificial flavors, or preservatives are used at all. The Sablés get their characteristic round shape from bronze cookie cutters—another sign of the baking craft that is still lovingly preserved. After being cut out, they are slowly baked in traditional ovens and, once cooled to room temperature, packaged by hand. The Sablés, in all their varieties, taste incomparably good. They are crumbly, buttery, and delicate, with a flavor that truly reflects their ingredients.
