In the Swiss canton of Valais, raclette is traditionally prepared over an open fire. About half a wheel of the flavorful cheese of the same name is placed close to the flames so that it begins to melt, taking on a slightly smoky aroma, and can then be scraped off with a knife into tender, melt-in-your-mouth portions.
