Free-form hot forged pans, also formerly called “hand forged“ have been manufactured by Turk in Westphalia since 1857. Today they are mostly sold in the restaurant business because professional chefs won’t settle for anything less than the exceptional frying characteristics of these pans. The family run firm, which is now in the fifth generation, was started when the skilled blacksmith, Karl Albert Turk, set up a hammer mill in the mill of his father-in-law. The models shown here with the high rims and the elongated handles with hooks were all manufactured for us there.

Almost relegated to decorative nostalgia, the forged iron used here isn’t just pretty. These pans are drop-forged in one piece and then free-form hot forged by hand: You see that by the continuous handle with hook and the surface structure typical for work in the forge. The reddish brown to greenish grey hues in the material are created by heat. The pans stand up to the greatest stress from gas or induction stoves. Once they are burned in they display the best conductivity, and are as slick as coated pans, without being sensitive to scratches and high temperatures. The manufacturer’s guaranty on material and manufacturing defects runs for ten years, for a pan that will last several times longer than that.
The pans are suitable for all stove types, electric, gas, induction and even open flame, but we caution against use with glass ceramic cooking tops because the raw surface of the pan material can leave marks behind on the glass.
