    General Information

    Santoku means three virtues.

    The Japanese name "Santoku", which means "three virtues", already indicates the good qualities of this knife in cutting meat, fish and vegetables. In Japan, it is the universal kitchen knife, and characteristic of its shape is the blunt upper edge running in line with the handle. The wide blade protrudes far below the handle.

    Typical for our Santoku, however, is not only the shape of the blade, but also the blade material refers to Far Eastern knifemaking tradition. Blacksmith Uli Hennicke, founder of Hohenmoorer Messermanufaktur in Asendorf in the district of Diepholz, manufactures blades of three-layer steel in his workshop in almost meditative concentration, which fascinate with their puristic, almost archaic-looking minimalism. He combines an extremely hard inner layer of carbon steel with two layers of pure iron. There is a reason for this, because in this way the blade remains flexible despite all its inner hardness and becomes considerably more break-proof. The cloudy appearance of the blade testifies to the self-confidence of its smith: it is created during the sharpening process and is not over-polished, but allowed to appear completely original. The knife handle, made of smoked oak, also shows that Hennicke values character: The distinctive grain of the oak wood emerges differently on each handle. The tang, held in place with a brass ring, lies completely within the handle of the knife. This brass ring is additionally glued. This prevents moisture from entering the handle and deforming or cracking the wood. With their octagonal oak handle and their balanced weight, Hohenmoor knives lie well in the hand - reliable tools for the work in your kitchen.

    Care instructions:

    Carbon steel knives do not belong in the dishwasher. Wipe the knives dry after rinsing and occasionally apply some blade oil. Discoloration may occur on the blade material. However, this is not a sign of inferior quality, but only indicates the rather high carbon content in the material. In case of flash rust, the use of the rust eraser is recommended. A resharpening can be done with the sharpening steel.
