Triple Laminate Steel Hohenmoorer Knives
These knives with a forged blade, sharpened on both sides, and octagonal handle made of smoked and oiled oak wood originate from the Hohenmoorer Messermanufaktur, located in the North of Germany. Triple laminate steel is forged for the blades. The extremely hard inner layer of carbon steel is forged together with two layers of pure iron. This makes the blade more flexible and less likely to brake.
Carbon steel knifes are not suitable for dishwasher use. Dry knifes off after washing (apply some blade oil when unused for longer period of time). Rust film can be removed with a rust eraser. Re-sharpen with a sharpening steel.
Carbon steel knives do not belong in the dishwasher. Wipe the knives dry after rinsing and occasionally apply some blade oil. Discoloration may occur on the blade material. However, this is not a sign of inferior quality, but only indicates the rather high carbon content in the material. In case of flash rust, the use of the rust eraser is recommended. A resharpening can be done with the sharpening steel.
