This mild, viscous and exceedingly fruity, yellow-green dripping oil escapes from olives that have been freshly harvested between November and March during their passage along the conveyer belt frame – before the first press – something that only happens in small oil mills. The oil has a slightly sweet scent, with aromas of dried fruits and tea, and it tastes nutty, harmonious and buttery, like artichokes and ripe fruit. The ROI oil mill, founded in 1900, extracts just 8-10 litres of this precious oil from over 400 kg of olives. It is used exclusively for cold dishes, such as in the seasoning of fish or braised white meat as well as with fruits and desserts.

No other oil can claim such a wealth of varieties. Depending on the type, region, soil, wind, harvest time and the age of the tree, the taste, colour and character of oils even from neighbouring elevations can vary. Along with the export boom of "green gold", however, has come everything that is beyond intolerable but that generally happens when a finite raw material turns into an almost infinite stream, flowing throughout the world: falsifications, manipulations, even the application of chlorinated solvents.
Those who are interested in really good olive oil, on the other hand, insist on oil from mills using traditional methods, from oil millers whose capacity may be small, but who make up for this with the great ethos of their craft. Some of them even produce under the label of protected and controlled indications of origin - DOP (Denominazione di Origine Protetta) in Italy, AOC (Appellation d'Origine Contrôlée) in France. The olives used for these oils must originate from the geographical area in question, and the oil must be obtained in a traditional way in the same region, all the while adhering to clearly defined quality standards. To ensure all of this, the production is strictly monitored. In addition to picking by hand and mechanical milling (exposure of the oil seed under upright millstones), we must ensure that the oil is obtained by our producers with only a slowly increasing amount of pressure (max. 1.5 bar instead of 10 bar in industrial production). The result: oil of the highest quality, a high degree of differentiation, balanced flavours while at the same time low yields leading to smaller quantities. From a variety of exquisite oils, we have selected those whose taste characteristics beautifully reflect their origin. This variety of oils exists not only in the Mediterranean but also in other parts of the world.

Pure dripping oil for the cold kitchen; Mild, viscous and very fruity. It trickled out of the freshly harvested olives during the first edge run (only used in small oil mills) before the first pressing. Only 8 to 10 litres of this precious oil (which is only sold very rarely) are obtained from 400 kg of olives. Oil from 100% Taggiasca olives, unpressed. Acid content less than 0.8%.
