Italian baristas appreciate this creamer for two reasons. First and foremost, the shape of the rounded spout is advantageous, allowing for a well-proportioned, drip-free pouring over the entire surface - so that the foamed milk can still be easily poured over the side into the cup to create a small work of art. At the same time, the nature of the jug's base and the neat wall thickness ensure that the temperature can be controlled when heating and frothing the milk with the bar machine's steam lance. For the result, this second factor is equally crucial, because if the liquid is heated too quickly, it will not build up well into a regular froth.
Our milk jug comes from Ilsa in Collegno, Piedmont. Originally founded as an aluminum processing plant - ILSA is an acronym for Industria Laminazione Stampaggio Alluminio - they've been making coffee-making utensils and other kitchen accessories there for over 70 years. The most famous utensil from the company's range is the classic Caffettiera alla Napoletana, a stovetop coffee maker in which the bottom and top sections switch roles during preparation. Stainless steel was first used in the 1950s, the milk jug was created on the occasion of the 60th anniversary of Ilsa in 2006.
