When mocha is prepared in the Arab world, it is more than just a hand movement - it is a small everyday ritual. The strong coffee is traditionally made in a "dallah" or "rakwa" - a copper pot with a long handle - in which the hot drink unfolds its unmistakable character over an open flame or glowing charcoal. In Turkey, this centerpiece of coffee preparation is called "cezve", in the Balkans it is called "džezva". Different names, but they all stand for the same idea: with simple means, a little leisure and care, a few ingredients are transformed into an extraordinary taste experience.
Powder-fine ground coffee is gently heated with cold water in a copper pot. The heat rises slowly and the coffee begins to boil gently until a dark, velvety foam finally forms - the moment that rewards patience: served in small cups, the hot mocha unfolds its intense aroma. Depending on the recipe and personal taste, it can be enjoyed pure, sweetened or refined with spices such as cardamom, cinnamon or cloves, whereby the sugar and spices are heated right from the start so that the aromas can develop optimally and combine with the coffee.

The gentle preparation in the copper pot, in which the powdered coffee powder is gently heated in water for several minutes and a particularly large number of flavor-bearing ingredients are released, creates a complex flavor profile - accompanied by that dark, fine foam that reliably locks in the volatile aromas and makes every sip an intense, well-rounded experience. Fortunately, this method of preparation is also effortless on the hob or over a gas flame - and brings a piece of centuries-old coffee culture into the modern kitchen. Our copper pot comes from Italian specialists in metalworking for the grande cucina. In the Cu Artigiana workshops in Sant'Anastasia near Naples, they are experts in excellent copper craftsmanship for upscale gastronomy and cuisine. Tin-plated on the inside, the Neapolitan copper pot is ideal for preparing an aromatic "Caffè Turco". With little more than water and coffee powder, a mocha of remarkable expressiveness is created in it, which is nevertheless considered to be particularly digestible: an indulgent drink that slows you down and invites you to celebrate drinking mocha as a small ritual.
