In the Swiss canton of Valais, raclette is traditionally prepared over an open fire. About half a loaf of the spicy cheese of the same name is placed near the flames so that it begins to melt, takes on a slightly smoky aroma and can be scraped off with a knife into tenderly melting portions. This raclette grill, which we source from France, offers one way of imitating this method of preparation.
