Crispy and crunchy on the outside, light, fluffy, and soft on the inside: that’s what makes Belgian waffles so special. The basic recipe for the batter is surprisingly simple. Flour, eggs, milk, and butter are the core ingredients. The unmistakable taste experience comes primarily from the waffles’ characteristic structure: pronounced dough bridges and deep, clearly defined honeycomb patterns. These increase the surface area, ensure a crispy texture, and at the same time provide plenty of space for sweet or savory toppings.

Form follows cuisine. A defining idea

We therefore made this unique honeycomb structure the focus of our requirements and, in collaboration with the Italian manufacturer Milantoast, developed a waffle maker that—designed as a professional kitchen tool —is powerful, robust, and built to last, and meets all the requirements for baking results of culinary excellence. From the Milantoast contact grills in our lineup, you’re familiar with the tried-and-true housing featuring a minimal yet functional set of controls. The true heart of this professional appliance, however, features a unique characteristic: raw, untreated cast iron, designed to achieve the best possible baking results. Here, nothing—not even a ceramic coating—comes between the batter and the baking plate. Heat transfer could hardly be more direct, and that is precisely one of the essential requirements for creating the crispy outer shell and the moist, light, and airy interior of Belgian waffles.

Genuine patina. Protects against rust and provides non-stick properties

Cast iron—the traditional material cast from molten iron into a mold—reveals, upon close inspection, a surface dotted with tiny pores, which is particularly advantageous during the seasoning process. When we coat the iron with oil, it can penetrate the pores and, under the influence of heat, form a hard, smooth layer there. This patina not only protects the iron from rust but also builds up a nonstick layer over time that is tailored to the material—a layer that becomes darker, thicker, and more effective with every use. To get started, take a little time to care for this tool with character, and kick off the process of seasoning it to achieve outstanding baking results. Once the patina has formed, maintenance is limited to just a few simple steps: Clean the baking plates with hot water, dry them thoroughly, and then apply a very thin layer of oil.
