General Information
You can recognize enamelware for professional kitchens by the quality of the enamel finish - and by the color combination chosen. Black on the outside, cobalt blue on the inside: this is how pots, pans and roasters for restaurant kitchens have always been made. The company Riess in Austria produces this cookware exclusively for Manufactum.

These rectangle forms feature deep-drawn protruding handles, so it’s easy to pick them up with oven mittens or potholders when they come piping hot from the oven. At Riess in Lower Austria, an expert in deep-drawing sheet steel, they enamel the baking dishes cobalt blue inside and black outside – a colour combination formerly reserved for professional cookware.
