Szechuan pepper is the name given to the dried berries of the yellowwood tree. Their peppery spiciness is complemented by distinctive citrus notes. The spice is ubiquitous in Chinese cuisine (especially in the south of the country). Our Szechuan pepper comes from wild collection in Nepal and comes in the form of whole berries. If you crush them, this enhances the spicy effect even more.
