Bärli-Biber have been known in Switzerland since the 16th century as an exceptionally moist and generously filled gingerbread treat. The dough, made from wheat flour, honey, and hazelnuts, rests overnight before baking. Only the next day is it rolled out, cut into pieces, and pressed into one of the traditional cookie molds. Finally, the moist almond filling is spread on top and the top layer is placed over it.
