    Luscious. Hazelnut nougat

    Nougat is a rather soft concept in the truest sense of the word. While in France it is mainly the white Provençal nougat that is known, in the area around Turin a variant was created in which the once rare ingredient cocoa was stretched with roasted hazelnuts: the dark hazelnut nougat was created. Bonnat has been inspired in its own way by the dark Piedmontese nougat tradition - to create a luscious chocolate bar with a cocoa content of 55%, which is not - as is often the case - merely filled with nougat, but consists entirely of it.

    Voiron, about 25 kilometers northwest of Grenoble, is home to the chocolatiers Bonnat. Their chocolates enjoy an outstanding reputation based on consistency, experience and enthusiasm. The consistency begins with founder Felix Bonnat, who in 1884 was the first chocolatier in the world to produce plantation chocolates separated by origin. His great-grandson, Stéphane Bonnat, continues this tradition to this day. He cultivates a philosophy similar to that of quality-oriented viticulture because, as with wine, there are also great differences in cocoa between growing regions, bean varieties, local characteristics of the plantation and the aromas inherent in the beans. To preserve these unadulterated in chocolate also requires consistency in the ingredients: Bonnat was one of the first chocolatiers to dispense with soy lecithin. He uses only cocoa, cocoa butter and sugar - and some milk powder for the milk chocolates.

    From bean to bar

    Bonnat works "from bean to bar," meaning he takes all the steps from raw cacao bean to chocolate bar into his own hands. To this end, he maintains contacts with small plantations of only 3-10 hectares in the respective country of origin, which grow the cacao without pesticides, fertilizers or other chemical aids and irrigate it with water from the surrounding area. He imports the beans himself and roasts them, tapping into the up to 400 flavors they contain - a process that requires a delicate touch. Roughly speaking, the roasting is followed by the grinding of the beans and the conching, while the sensitive details of the processing remain the family's secret. Bonnats joy in his own profession and the claim to make perfect chocolate can be tasted with every piece: it is incomparably good, with a smooth bite and a fabulous aroma.
